Mr. Mysterious
I decided Im bored and my girlfriend is at work, so i thought id surprise her with some dinner. Fish, pasta, id like to have something with some vegetables in it, kinda healthy ya know, but delicioso! please help me thanks Goto the asian market (wherever that is in your city). Purchase the following items: 1.) 8-12oz can of coconut milk. 2.) 1 small (as small as possible) container of yellow curry paste. 3.) 4-8oz can of bamboo shoots. 4.) 1 small package of fresh chinese basil leaves. 5.) 1/2lb of fresh chicken (I use breast tenders from wal-mart and cut them up). 6.) Some boil-in-bag rice. (from wal-mart). Then follow the following recipe: 1.) Get a pot medium size....maybe 2 quart size...and bring the can of coconut milk to a boil. 2.) Add about 2 tablespoons (maybe 3 depending on how it tastes) of the yellow curry paste into the milk. 3.) Add the bamboo shoots and add some chopped up basil leaves. 4.) Stir it all fairly frequently at med-high heat on the burner. 5.) Start boiling the rice in another pot. 6.) Add the chicken to the first pot (the one without rice). 7.) By the time the rice is done, so will the yellow curry chicken. 8.) Keep both warm (just on low) and serve them asap. She will like it. Not too spicy, not bland at all though. It's Thai food dude! hosswhispra
How about some roasted vegetables with sprinkled grated parmesan cheese over them. I got this recipe from annie24 and I made it last night. It was soooo yummy and so easy to prepare. Basically, you cut up the vegetables (or if you don't have time for that, stores usually sell cauliflower florets and cut up carrots) and sprinkle olive oil, pepper, salt (I also added some Montreal Chicken seasoning from McCormicks Grillmates) and roast vegetables at 450 degrees for 15 minutes. After the vegetables come out of the oven, you sprinkle the grated parmesan cheese over them. It was so yummy! Roasted cauliflower with parmesan: 6 cups cauliflower florets 1 tbsp olive oil 1/2 tsp salt 1/2 tsp pepper 1/2 cup grated parmesean cheese Mix all ingredients except for the cheese. Bake at 450 F for 15 minutes. When done, toss with the cheese. 6 servings per 1 serving: 83 calories 2.5 g fiber 5 g fat The recipe can also be made with carrots, brocolli, or asparagus. I got this off the link removed website. Link to comment

annie24
You can also do a little "taco" night. bring along some tortillas, refried beans, diced chicken, sauce, salsa, chopped tomatoes, onions, cilantro, lettuce, and cheese, and toss it all together. Link to comment
