I have heard that if a man shows interest in who you are and what you say, that they like you. Is this true? I know someone who is very interested in what I say. But there is someone else who also was, and in the end he wasn't interested in me. Also, what are other indicators of interest. I know that there are lots of things said about body language, such as eye contact, and frequent touching...but what about other indicators?

A good listener may be interested - or he may just be a good listener.

 

Other signs of interest: as you mentioned; eye contact and touching.

Body language. Talking to you frequently, and more than other women. Smiling a lot in your company etc.
