In fact, as my exposure and knowledge of singing increases, I realize more and more that I'm not that good lol.
It means your ear is developing. It's not that you're not good, it's that your abilities are growing. I go through this every so often, too. Once I start noticing nuances that I didn't before, I know that's because they're getting under my fingers. Before I know it, my vocabulary expands by a couple phrases. It's the payoff.

Sex Mob - Din of Inequity
John Coltrane - Coltrane's Sound, A Love Supreme, Ballads
El Michels Affair - Sounding Out The City

Frank Zappa - Hot Rats (rock w/ heavy jazz leanings)

I think you would like Calexico. Feast of Wire is a good album. You seem to like singer/songwriter-y kind of stuff. For the classics in that genre, Joan Armatrading is great, her self-titled album is a really good one. Maybe some Cat Stevens. Ramblin' Jack Elliot is great. Anything by Peter Gabriel from the 1st album up until Security is brilliant (I see you have him listed, but I'm just telling you which albums are my faves, if you don't have them). As for newer stuff, try McCarthey Trenching, Eleni Mandell and Lisa Germano. Another new band I really like, which you may or may not, is Grand Archives.

THe album is Lateralus. The first track is THe Grudge another great one that talks about "lettting GO". Maynards lyrics are really positive on this album
That was the album where they lost me. It sounded to me like they abandoned their hooks and got bogged down in technicality. I think maybe I'll go back to it just to check out the lyrics. Thanks!

Breakups suck, but when they happen you have to cover the exposed areas of your self in order to be able to move forward. That means focusing on you and now, rediscovering yourself and leaving the past where it lies. You have said you're not interested in keeping things on a platonic level, so you have to do what's best for you. It's not about caring or not caring about her or the relationship, it's about caring about yourself at this point. As you said, you do just have to "man up" as they say and move forward with your life. Every experience has value, but most of them aren't meant to last a lifetime. You take from each, you learn, you grow and you go forward.
