Great Christmas season date ideas

It’s this girl I’ve been seeings birthday coming up. I want to do something special for her. 
 

im thinking of doing a hot air balloon ride ( she wants to do it one day she told me) 

but im looking for other ideas. 
help please

How about take a baking class together and maybe there's one that focuses on holiday baking? Hot air balloon seems like a lot - and a lot of $$.  Are you sure this is top of her bucket list? Or often local botanical gardens (like ours!) have holiday light displays -that and romantic dinner.
