So the benefit of removing gluten in some cases can be that since it's bound to starch and you remove the complex of gluten-starch, you can reduce the sugar content. BeStrongBeHappy Posted March 26, 2007 Share Posted March 26, 2007 It is fairly common for people to be allergic to wheat, and many times not know it... some people can react to it by producing lots of intestinal gas and hence bloating and other symptoms, and they can experience relief from these symptoms by avoiding wheat/gluten based products... so it could be interpreted as making one 'fat', but that is only gas bloating in people with sensitivities to wheat/gluten. some people do feel quite a bit better when they give up gluten, milk products, or other products that can causing bloating in people with sensitivities/allergies to those products.
