eNotAlone "Best Comfort Food After A Break-up" Recipe Contest!
Hi, eNotaloners! We all know one of the most tried and true ways to get over a break-up is to busy ourselves in the kitchen - from indulging ourselves by eating brownies straight out of the pan to cooking up a dinner party for our friends.
So, we'd like to see what "masterpieces" you've come up with in our "Best Comfort Food After a Break-up" recipe contest. The rules are simple: 1) Submit original recipes only - no cribbing anything from the Internet! Of course, we understand many recipes are adapted from other ones, and that's fine, but play fair - we want to read recipes you've developed and tried yourself in the past. 2) A photo of your masterpiece is optional, but strongly encouraged. If you submit a photo, you must include a sign referencing the eNotalone recipe contest in it (not words Photoshopped in). You don't have to show your faces, of course. 3) You can submit up to three recipes. 4) The winning recipe will be judged by a panel of five judges....meet your judges! Elektrahere, Tylercdurden2004, coollady1957, icemotoboy, and kellbell. This thread will be open until August 7th, at which time it will be closed and judges will begin testing a select group of recipes that appear to be the yummiest! The winning recipes will be announced on August 14th. First prize: Hardcover copy of "Cooking the RealAge Way: Turn back your biological clock with more than 80 delicious and easy recipes" Second prize: Softcover copy of "Mommy Made and Daddy Too! (Revised): Home Cooking for a Healthy Baby & Toddler" So get those aprons on and start a'cookin'!

Strawberry Mango Crisp
Filling: 1 cup of strawberries cut up 1 cup of peeled mango cut up 1/4 cup brown sugar (organic, non processed is best!) 1 tsp vanilla extract Crust: 1 cup rolled oats 1/2 cup brown sugar 1/2 cup flour (non rising, whole wheat flour is best) 1/2 to 1 cup soft or melted butter or margarine Preheat oven to 350 degrees Celcius. For filling, just mix it all up and let it sit while you make the crust. For crust, mix dry ingredients together. Mix in butter or margarine until it's moist enough that when you squeeze the mixture, it sticks together but still crumbles. Put filling into an 8" pie plate or square pan (I like using Pyrex). For crust, grab handfuls of it until it sticks together and drop onto filling so that it crumbles. Continue until it's covered. Pop into oven for 20-30 minutes, until top is browned and the filling bubbles. I like it straight out of the oven with ice cream. Can be warmed up for quite a few days afterwards. ![]() ETA: Quote:

Creamy chicken enchiladas
The best chicken enchiladas ever!
You'll need... 1 8 oz package of cream cheese - cut into cubes 1 10-12 oz can of cream of chicken soup 1 10 oz can of Rotel tomatoes w/ green chilis - drain all liquid (do not substitute unless you absolutely have to, and you can choose between the hot kind or mind, that's up to you) 1 lb of cooked chicken cut into very small pieces (or 1 big can of chicken if you want it to be even easier!) 1 10 oz can of any brand green chile enchilada sauce 1 package of finely shredded cheese (preferably mexican / fiesta / taco type) 10 small flour tortillas finely chopped onion or green onion (optional) Preheat oven to 350 In a large skillet or frying pan soften cream cheese add cream of chicken soup... blend well once above items are smooth add rotel tomatoes and cooked chicken (onions if desired) Simmer on low for 4-5 minutes stirring well Spoon chicken filling onto tortillas, roll up and place seam side down in lightly greased baking dish (13x9 preferably, glass works best imho) Pour enchilada sauce over the top of your tortillas and then sprinkle with cheese. Place in oven for 10-15 minutes (until hot or cheese is melted) Serve with chopped lettuce, tomatoes, onions, guacamole, sour cream, salsa if desired - refried beans w/ shredded cheese - spanish rice Idea for alternate dip dish since my mom thinks the mixture makes a good dip... Follow recipe above but instead of placing mixture in tortillas place in a casserole dish, cover with enchilada sauce and cheese, place in oven until cheese is melted. Chow with tortilla chips. |

I like making herb-crusted salmon with mashed potatoes with asparagus and hollandaise sauce (creamy lemony tart sauce). Simple recipe: 1 lbs. salmon lemon herb seasoning dried parsley flakes (crust the skin side of the salmon) 1 lbs asparagus 1/4 c mayo 1 teaspoon lime sauce 1/4 c water To make salmon: 1. Grill salmon on all 4 sides (2 is fine). Grill herb crusted side last. (10 min total). 2. Grill asparagus (5 min.) 3. Finished Hollandaise sauce: 1. Mix mayo, water, and lime juice together. (2 min.) 2. Simmer in small cooking pan on low heat for (3 min.) Preparation time: 20 min. max Healthy and hearty..mmm..mmm.mm..Perfecto! |

Sausage and cream cheese casserole
Easy, DELICIOUS, and low in calories. Except it's not low in calories.
2 pounds of pork sausage 2 blocks of cream cheese, softened 2 cans of crescent rolls Preheat your oven to whatever the crescent rolls require. Unroll one of the cans of crescent rolls on the bottom of a casserole dish. 8x10 is best, but 9x12 is more common, and will do. Once the oven is heated, bake the crescent rolls until they're about 3 minutes from being done. While you're waiting, brown the sausage. Take it out of the pan and lay it in a paper towel, but just long enough to suck up some of the grease. Mix the sausage with the cream cheese. Stop eating the mixture. Spread the mixture over the top of the already baked crescent rolls. Unroll the other can of crescent rolls over the top of the mixture, and bake until the top layer of crescent rolls is nice and golden brown and yummy. Eat till you're over him. A few suggestions: Spread a little bit of honey or jelly over the top of a serving. Magnifique. Make sure some of the sausage is nice and crispy. If you really, really want to save some fat, use turkey sausage instead of pork. Just add some pepper and garlic salt. (Or Tony Chachere's seasoning if you can get it.) Buy the buttery crescent rolls. Mmmm... I've been happily married for 5 years, but I would totally pretend to break up with my husband if it meant I could eat this. |

Chocolate chip cookie casserole
2 packages of Chips Ahoy cookies (NOT chewy!!!)
2 regular sized tubs of Cool Whip Milk as needed (at least several cups) 1st layer: Dip the cookies, one by one, into the milk. Place the cookies into the bottom of the casserole dish in a single layer. 2nd layer: Spread about half of 1 tub of Cool Whip on top of the cookies. 3rd layer: Repeat 1st layer 4th layer Repeat 2nd layer. This should be your last layer. Leave it in the fridge for about an hour... but if you don't have time, don't worry about it. Suggestions: Pour the milk into a shallow bowl. Less chance of dropping the cookies that way. Don't hold the cookies under till they're soggy. Hold them under for about 2 seconds. For a pretty casserole, save the cookie crumbs and sprinkle on top. DON'T FORGET to thaw the Cool Whip first! At least 4 hours or overnight in the refrigerator! |

Mine is really simple.
Custard with chunks of chocolate at the bottom of the bowl. It melts and when you get down to the bottom, you have all this melted chocolate! Photo's would not be cool as it would probably look like vomit.
